How does one determine which mod has updated, so we can get back into a server without getting mod-mismatch?

It's hard to say but you could try unsubscribing from all the mods and resubscribing that should force an update.
Normal Modded Cluster Modlist:

You could also try clearing your download cache on steam.
Open Steam> Click Steam in the top right-hand corner> Choose settings from the drop-down menu>Click Downloads tab>Click clear download cache
